Brush Creek Beverage Co. produces a small batch, handcrafted, distilled spirit called Shōchū. 502 is their spin on this unique spirit and is made with North Carolina sweet potatoes, rice, natural cane sugar, and koji right here in Clayton, NC at InStill Distilling Co. (a local rum distillery).
After some research, Brush Creek Beverage Co. found that Shōchū was discovered by the Mongols in ancient Persia and gained popularity across the middle east for the next 400+ years. It then arrived in Japan around 4 centuries ago when the use of different base ingredients and the adoption of other fermenting processes and methods resulted in improved flavor profiles. The 502 Shochu recipe uses some of both methods, but with an added twist of some American originality! The result is a smooth sipper (straight up or on the rocks) that also makes an outstanding base for your favorite cocktails.
