Queso Monster is here to redefine the Mexican food truck. With over 15 years of experience, Baja-vets Miguel Lopez and Patricia Martinez have made it their mission to bring fun, adventurous twists to authentic Mexican recipes, and deliver them from west to east coast, where their touch is in desperate need. These aren’t your standard tacos, not to mention standard quesadillas, nachos or huaraches. Beasts like the Chupacabra (chorizo, grilled onions, grilled jalapeños, and zucchini with pepper Colby jack) go toe to toe with other beasts like the Chipotle Monster (steak, chorizo, triple peppers and chipotle gouda cheese, doused in chipotle sauce) to become grand champion of your appetite, conquering it mercilessly and without resistance.
If you wanna go lighter, authentic tacos also round out the menu, so that no matter what hunger you bring to the table, you’ll be thoroughly and appropriately satisfied. This is Mexican the likes of which Raleigh has never seen, so don’t be shy the next time you see them. This is one monster you’re gonna wanna just roll over and admit defeat to.
