The Level Up Kitchen & Barcadium Expands with Pop-Up Sandwich Shop

Jon Seelbinder, the owner-operator behind The Architect Bar & Social House and Greenlight Bar on Hargett Street, is making good use of the former Subway restaurant space just below his Level Up Kitchen & Barcadium restaurant and bar on Salisbury Street with a pop-up sandwich shop.

Collaborating with Raleigh’s Chef Mike Santos (the pair friends since high school) – as well as Yellow Dog Bakery, lucettegrace, Endless Sun Produce, Raleigh City Farm, Big Boss Brewing, and The Chef’s Academy – the new “Linus and Pepper’s Pop-Up Sandwich Shop” opens Monday, August 3. The shop, which is open daily from 11:00 a.m. until 7:00 p.m. at 120 S. Salisbury Street, offers a menu that features much more than ham and cheese:

Pepper Jelly Pimento Cheese BLT on sliced Yellow Dog Bakery Rustic Loaf (served hot or cold):
Jalapeno pimento cheese spread, pepper jelly crispy bacon and caramelized onions, Arugula greens and sliced vine ripe tomatoes – $9.00

Smoked Gouda Monty Cristo Ciabatta Bread Panini: With black forest ham, turkey, mint jelly, sliced smoked Gouda cheese and crispy bacon in a light egg wash served warm off Panini press – $11.00

Italian Baby Mozzarella Caprese Yellow Dog Sliced Rustic Loaf: Capricola ham, Prosciutto, Salami, baby mozzarella, tomato, basil olive tapenade and a balsamic glaze – $10.00

Island Shrimp Salad on Lucette Grace Bakery Croissant: Grilled shrimp, red onions, pineapple, jalapeno mixed peppers in a cilantro coconut curry mayo served with arugula greens and alfalfa sprouts – $11.00

Smoked Gouda Seared Ahi Tuna Melt On Lucette Grace Sourdough Loaf: Blackened Seared Yellow Fin Tuna served medium rare, mixed deviled egg spread, smoked Gouda, tomato, arugula and alfalfa sprouts – $13.00

Green Grape Chicken Salad on Lucite Grace French Croissant: Pulled chicken, red onions, celery, crispy green grapes in citrus rosemary mayo, lettuce and sprouts – $9.00

Cobb Salad Turkey, Ham sliced Yellow Dog Rustic Loaf: Thin sliced turkey, Capricoloa ham, and black forest ham, sliced eggs, Arugula, sprouts, avocado tomato compote, and bacon finished with a blue cheese buttermilk aioli – $9.00 w/ side

Mojo Pork Belly Cuban Ciabatta Panini: Crispy pork belly, pulled mojo pork and black forest ham, Swiss cheese, barbecue mojo pickled mustard slaw – $12.00

Sides: Choice of Gourmet Bagged Chips – $2.00
Side Salads – $3.00

Beverages: Can and Bottled beverages – $2.00

Grilled Peach Summer Watermelon English Cucumber Salad: With pickled red onions, dried cranberries and fruits, blue berries, Arugula greens in a white balsamic mango mint dressing and Local Goat Cheese crumbles – $9.00

Roasted Corn and Black Eyed Pea 3 bean salad: Roasted corn, black beans, Garbanzo beans and kidney beans, served over fresh Arugula greens, tomato, cucumbers, red onions, jalapeno, Serrano peppers, finished with a local goat cheese yogurt dressing – $8.00

Add: Chicken Salad – $2.50, Shrimp Salad – $3.50, Pork Belly – $4.00

In addition to sandwiches and salads, dessert has not been left off the list. Enjoy assorted daily offerings from lucettegrace and Yellow Dog Bakery at market price, as well as Linus & Pepper’s version a warm chocolate banana beignet, made from a lucettegrace croissant stuffed with Nutella and bananas, served warm off the panini grill and finished with powdered sugar for just $5.00.

PS: Curious where the name came from? Family, of course! Pepper is the niece of Seelbinder and Linus… well Linus is the full of personality Persian cat raised by Seelbinder and his girlfriend Lauren.

About Chef Santos

Chef Michael Santos is no stranger to the Culinary and food/beverage industry. His fascination with food beganwith his roots. He was raised in Newark, New Jersey, in the Iron Bound district. Here, a melting pot of Portuguese, Italian, Polish, Brazilian, and other European influences were highly visible and accessible in the local markets, restaurants, and European pastry shops. Moving to Burlington, North Carolina, he was surrounded throughout the years by the southern charm and tastes of the south. Chef Santos, born of Portuguese decent and from a family that loved ethnic foods and entertainment, never had an option, other than that of the culinary industry.

Chef Santos spent years studying the art of cooking from various master chefs: Polish, Portuguese, French, and German. He attended the Alamance Culinary Academy and also studied in Germany and France before coming to Greenville to attend East Carolina University. Here he received his Bachelor of Science and Arts in Hospitality Management with a minor in Business Administration.

Santos served as the Executive Chef at Christine’s Restaurant (Greenville, NC) from 1998 to 2002, ventured into restaurant ownership at Greenville’s Chefs 505 in 2002, and added Morehead City’s Chefs 105 with partners in 2007. In 2011, Santos decided to branch out and move away from restaurant ownership and now shares his skills as a personal Chef, while providing his services to those desiring in-home caterings, private events, in-home cooking classes, pre-prepared meals and other Chef-for-hire services.
