Behind The Scenes
The name Green Onions Bistro was created when Ronald and I were planting green onions. No joke! We wanted to share our love for innovative food at the same time not let our business name culturally define us. Ronald is El Salvadorian and I am Taiwanese, our cultural background is very different and that goes for the food we eat. However, we found a small similarity to other ethnic cuisines as well – the garnish. Something about the color, taste, and look gives the finishing touches to the dish. Green onions are a widely used garnish, and it resonates with us because, in a way, it connects the cultures just through this vegetable. Plus, green onions thrive in the cold and are so easy to plant and grow. We hope the name Green Onions will eventually “grow on people,” and our food will bring them a sense of togetherness. Hence, Green Onions Bistro LLC was established in June 2021.
Ronald and I both have restaurant backgrounds, but the food truck industry is a completely different venture. From paperwork to getting our first Green Onions trailer was definitely a learning curve for both of us. On top of that, the cost of starting the business was not what we estimated in the beginning. We really hustled to save money, researched, and collected advice from other food truck owners to get our business up and running. Green Onions Bistro was permitted in July 2022. Our hope for is to have a brick-and-mortar one day.
The three amigos that started this dream:
Ronald, Shay, and I (Sharon) all work on the truck and we all share the love of serving our food to our customers. What you may not know about us is that we all have our own individual day jobs. Ronald is a tattoo artist and owns El Zorro Tattoo. Shay is a freelance designer and owns What More Can I Shay LLC. I am a project manager and owner of Green Onions Bistro. We are all entrepreneurs living our dreams!
